For some people, the big holiday get together might be today on Christmas Eve. For some, it will be tomorrow. It is a special time of the year where we stop to take time to spend with family, friends, and loved ones by exchanging gifts, playing games with the kids but definitely with a big meal.

If you are still looking for that perfect recipe to have this Christmas, something sweet that everyone will enjoy, I am sharing my favorite Carrot Cake recipe with you. It’s simple to make and always a crowd-pleaser! Last week our office hosted a Holiday Dessert & Ugly Sweater party, and this is what I took as a contribution. There were so many delicious recipes and I think every offering was thoroughly devoured and enjoyed.

2 cups all-purpose flour

2 cups sugar

3 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

1 1/2 cups vegetable oil

4 eggs

2 cups grated carrots

1 cup crushed pineapple (w/ juice)

1 cup chopped nuts

Sift dry ingredients. Add eggs & oil. Beat well. Add carrots, pineapple (again, with juice) & chopped nuts.

Preheat over to 325. Spray 13 X 9 X 2. Pour batter into pan and bake for 45-60 minutes. Begin testing cake at 45 minutes.

Frosting recipe

1 8 oz. cream cheese, softened to room temperature

1 cube of butter

1 box of powdered sugar

Bring cream cheese to room temperature or soften. (I find microwaving the cream cheese in a Pyrex measuring cup for 45 seconds will soften it enough but stir/mix it up after heating to get an easy consistency to work with.) Cream together the butter and cream cheese. Slowly add the box of powdered sugar and beat.

Frost the cake! You can also sprinkle with coconut (toasted is always a great option) and nuts.
